Only the best strawberry crops and varieties are selected and harvested when the fruit reaches an advanced stage of ripening, in order to achieve a perfect balance of sweetness and texture of the fruit. The raw product is washed and mashed directly in order to preserve the freshness and texture of the freshly cut fruit and cannot be pasteurised.
