Chairman's Reserve Forgotten Casks is one of the most balanced and versatile rums in its class. A premium rum with an extremely interesting history. On May 2, 2007 a major fire broke out at the St. Lucia Distillers distillery in the Roseau Valley, which destroyed part of the premises. Most of the distillery was not damaged, but serious problems arose due to a lack of space for storing casks and ageing the spirits. During the ensuing upheaval Cyril Mangal (Cellar Master) began placing barrels in the most unlikely places in the distillery. Some of these barrels were forgotten, and were rediscovered a few years ago to give us the award-winning rum in the Chairman's range, Forgotten Casks. This is essentially the same blend as the company's trademark rum, Chairman's reserve, aged an additional 4 to 5 years. It comes from the distillation of fermented molasses in a traditional two-column (coffey) still, during which we obtain alcohol from the first and middle levels of the plates (alcohol levels of at least 94%). For this single blended rum we also use the beautiful John Dore no.1 (copper pot still).
Unpasteurized, unfiltered and with the traditional way of fermentation inside the bottle, Marea Ale is a Pale Ale beer. It is characterized by its distinctive full taste and the scent of citrus and dry fruit. Brewed with a range of 5 different cereal malts and hops it combines the sweetness of the malt extract with the bitterness of the hops leaving an intense bittersweet aftertaste.
Distilled at the privately owned 'Kurayoshi' distillery, it is aged in rare Mizunara barrels. Mizunara, or Japanese oak, combines a subtle sweetness, the aroma of aging that tickles the nose with a full and refreshing aftertaste that completes its uniquely exotic profile. Unfiltered, unpasteurized and second fermented in the bottle, Marea Blonde is a post-modern, hybrid Lager that has come to change everything you knew about Lager. Blonde hazy with a strong aromatic character composed mostly of tropical fruit, citrus and sweet spices. It is distinguished by its smooth body and lingering citrus aftertaste of grapefruit and sanguine, which give it a unique, summery, cool feel.
Plantation Single Cask rums are limited releases of Haute Couture double-aged rums.
All Plantatino rums are aged in a two-stage aging process, starting in the tropics where they are aged in bourbon barrels, and then at Chateau de Bonbonnet in France to mature in Ferrand barrels.
Plantation Single Cask rums then benefit from further aging in carefully selected beer, wine or spirits barrels, each chosen to enhance the unique characteristics of the rum.
Each Single Cask rum follows its own aging path to greatness and each bottle is personalized and numbered. Only a few barrels of these unique reserve rums are bottled annually, making them collector's prizes.

A wonderful 15 year old single malt full of sherry and dried fruit notes. It is bottled at 46% ABV which results in the whisky having a juicy Christmas cake profile. A complex Scottish single malt that is very easy to drink.
