Plantation Single Cask rums are limited releases of Haute Couture double-aged rums.

All Plantatino rums are aged in a two-stage aging process, starting in the tropics where they are aged in bourbon barrels, and then at Chateau de Bonbonnet in France to mature in Ferrand barrels.

Plantation Single Cask rums then benefit from further aging in carefully selected beer, wine or spirits barrels, each chosen to enhance the unique characteristics of the rum.

Each Single Cask rum follows its own aging path to greatness and each bottle is personalized and numbered. Only a few barrels of these unique reserve rums are bottled annually, making them collector's prizes.

These unique spirits could not have been created without Alexandre Gabriel, Plantation Cellar Master, who with his love and passion for rum, takes a unique approach to each rum producing country.

This delicious rum is made using traditional techniques and local sugar cane. It is first matured in bourbon barrels in this tropical climate and then transported to the southwest of France for its second phase; maturation in French oak barrels.

The result of double aging combined with Fijian expertise and tradition creates a rum with rich notes of exotic fruits and raisins!

Characteristics

Inspired by Charles Dickens' hero, Reverend Stiggins, famous for his fondness for pineapple rum. It is the result of a collaboration between two extremely talented gentlemen, A. Gabriel (owner of Maison Ferrand) and D. Wondrich (author of the Imbibe book). Rich, flavoursome and refined with smoky notes, but also aromas of exotic fruits, pineapple, citrus peel and a hint of cloves.

Limited bottling from just 24 barrels, selected from the cellars of Trinidad Distillers Limited, by Alexandre Gabriel and Andrew Hassell, general manager and rum historian at WIRD. Fermented with 3 days' molasses and distilled in multi column, this amazing rum is matured for 11 years in 200 litre ex-bourbon barrels in the distillery's cellars in Trinidad and for a further 1 year in Javrezac, France, in 400 litre French oak barrels from Ferrand.

Tonka nuts, vanilla, caramel, coffee, cooked fruit, spicy nuts and a light floral aroma complete the aromatic profile. The finish is marked by distinct bitter almonds and layers of fresh fruit.
