The main ingredient are fresh first quality artichokes, partly finely minced (60%) and partly cut into pieces (40%).
The high quality of the ingredients and the peculiar recipe make this cream a specialty with a characteristic taste of fresh artichoke and it ensure a high number of portions. The mixture is 60% creamy, and 40% composed by pieces. This is made to obtain a much more satisfying visual effect in the finished dishes. It is ideal to change the proposals of the traditional menu with smalls costs and to manage possible emergencies in the kitchen. It is a ready to use product that allows the customer to spare the long work necessary to obtain a seasoning with fresh artichokes.

The fruit is harvested at full ripeness by partner producers who meet our company's demanding standards. The fruit is transported to the Ponthier factory where it is stored in optimum conditions in order to keep it fresh. There is a controlled storage capacity of 5,700 pallets, equivalent to the annual production.
During production the fruit is sorted, mashed, sugar is added and the puree is refined, then pasteurised to ensure food safety and re-frozen to preserve the taste and colour of the fresh fruit.
OUR SPECIFICATIONS
The fruit: selection of the best varieties and origins, free of impurities, purchased once a year, at the time of harvest, at agreed brix levels, on a contract basis, and thoroughly checked for pesticide residues in each batch.
The process: no additives (colourings, coagulants, flavour additives...), pasteurisation temperature control for each fruit.
The final product: taste test on each batch to ensure a taste and colour identical to fresh fruit, as well as a dense, soft and homogeneous texture.
Quality: commitment of management and all teams to meet the requirements of the strictest IFS (highest level) and BRC (Grade A) standards to ensure food safety. KOSHER/HALAL certifications.
This product includes first choice mushrooms, of European origin, selected during their acceptance and seasoned, after a careful wash, with a very light blend of vinegar and aromatic herbs. They are then tinned with sunflower oil and a leaf of laurel, which further exalts their final taste.
This is a mix of ready made high quality mushrooms, and can be eaten as it is. It matches perfectly cold meats and salami, carpaccio, aperitif snacks, buffets, etc. The fragrance of the flavour given by laurel and vinegar is worth mention. This product is ideal for its immediate practicality, which avoids the long processing that is normally necessary with fresh mushrooms; furthermore, the chance of using the product all through the year is priceless. The tin is very practical thanks to its easy opening.
