Created from the combination of Cabernet Sauvignon, Merlot and Agiorgitiko varieties. A classic red vinification with maceration is followed, which continues after the end of alcoholic fermentation. After malolactic fermentation, it is aged for 12 months in French oak barrels. Its colour is deep purple to reddish-black. It is served at 18oC and has a long ageing potential.
Produced from the French variety Merlot as it is expressed in the microclimate of Pangeo. It follows the classic red vinification with long maceration. After the end of malolactic fermentation, it is aged for 16 months in new French oak barrels. It has a dense reddish-black colour. It is served at 16-18 °C and can be aged for at least 10 years.
It comes from the Cabernet Sauvignon variety and specifically from the first vineyard of the Estate planted at the foothills of Pangeo. The grapes are macerated for a long time and aged in new French oak barrels for 16 months. This is followed by at least 24 months of bottle ageing. It has a deep reddish-black colour. It is served at 16-18oC and can be aged for at least 15-20 years.
Eratineses Wishes White is a multi-vineyard wine consisting of Assyrtiko, Malagouzia and Chardonnay. Three varieties that make up a wine with complexity and depth.
Vinification
The three varieties are harvested and vinified separately. Each is subjected to pre-fermentation cold maceration and temperature control during fermentation. They are matured for 6 months in acacia barrels for Assyrtiko, French oak barrels for Chardonnay and stainless steel tanks for Malagouzia.
Aromas
Aromatically, the wine is expressive. It is associated with floral aromas, citrus and exotic fruits, with botanicals on the second reading. On the palate, it is characterized by intensity, balance between acidity, mild oiliness and alcohol. The secondary elements of the barrel ageing emerge in the aftertaste. This is a white wine with the potential to mature.
Combinations
White Wishes is ideal with mildly fatty dishes, creamy textures of all types, fish, aged cheeses and green elements. Their versatile character, as well as their extroversion, make this a classic proposal with multiple recipients.
From the Assyrtiko variety, the Gymni Queen, stands out for its minerality, rich mouthfeel and finesse.
Vinification
The meticulous sorting, the stay of the stems in pre-fermentative maceration and the gentle treatment during vinification protect the "sacred minerality" of the variety and its rich aromatic character.
Aromas
The Naked Queen, has aromas of citrus, minerality and honey notes, thanks to the gentle presence of the acacia barrel. On the palate, it has a very balanced body, acidity, saltiness and a long finish.
Combinations
The intensity of the wine, its fine acidity and its exuberant body are ideal with dishes such as Mediterranean, salty, fatty dishes and creamy textures.
Eratineses Wishes Red is a multi-vineyard wine. It is the result of the meeting of Xinomavro with Syrah and Cabernet Sauvignon. Three varieties characterized by great intensity, particular aromatic characteristics and tannic strength.
Winemaking
The three varieties are harvested and vinified at different times, always according to the maturity of each one. The wine is matured for 16 months in French oak barrels and is characterised by its body and balance.
Aromas
Velvety texture thanks to the Syrah, tannic backbone thanks to the Cabernet Sauvignon and the gentle, earthy aromas of the Xinomavro. It brings together all the aromas carried by the varieties. Red fruits, hints of peppers and spices, sun-dried tomatoes and mint nuggets. On the palate, it is an exuberant wine, balanced between intensity and softness on the palate.
Combinations
The character of the wine makes it an ideal accompaniment to several dishes. Vegetable soups, veloute soups, dishes with creamy textures, up to more special ageing meats.
Two varieties, the well-known Syrah and the local variety Kolindrino in an unexpected meeting. The Naked King is born from the marriage of cosmopolitanism and tradition.
Winemaking
With a low yield and with particular attention to the ripening of the grapes, Gymnos Vassilis is a wine of great concentration, which requires the ideal moment of harvest. Thanks to the extensive maceration, but also because of its stay in French oak barrels, it has secondary aromas.
Aromas
Aromatically, it brings together elements of dried fruit and black forest fruits. On the palate, it is exuberant, full-bodied and balanced. It has a wide palette of interesting textures, expressed mainly through intensity, velvety but robust tannins and balanced integrated alcohol.
Combinations
The exuberant character of the wine calls for fatty textures, meats or fish with sometimes smoked preparations. For more special occasions, ossobuco, foie gras with red fruit, oily and crispy sea bass, umami flavours, cigars and dark chocolate with dried fruit will enhance the tasting moment.
Composition/Winemaking: 100% Assyrtiko from the emblematic Clos Stegasta vineyard. Spontaneous fermentation in a mixture of stainless-steel tanks, wooden vats and oak barrels. Bottled after seven months maturation on its lees.
Tasting notes: A wine of high energy and power that sets the bar for the variety. The nose shows a striking combination of citrus and honeysuckle along crushed rocks nuances. The palate is vibrant and focused ringing with flavor and movement. It is overlaid with purity and saline minerality and finishes impressively long.
Composition/Winemaking: 100% Mavrotragano from the magnificent Clos Stegasta vineyard. Fermentation with whole berries and whole bunches in big oak casks with indigenous yeasts isolated from our vineyards. The wine matures for about a year in 500lts oak barrels, 20% of which are new.
Tasting Notes: A seductive wine with a plethora of aromas. Oregano and violets are wrapped around a core of dark cherries, green pepper and espresso roast. The palate sets the ground along with the velvety tannins cutting through a complex and complete finish. A spherical wine seamlessly textured with no hard edges in sight. Delicious early on, better with age.
