Mastelo® is one of the most famous products of Chios. Those who love it persistently look for it under the name 'mastelo' but this cow's cheese officially belongs to the category of soft cheeses.
The soft cheese Mastelo® made from cow's milk is the most sought after and the most loved. It is delicious raw but, topped off deliciously grilled. That is why there is no visitor who has not tasted Mastelo® grilled cheese in the taverns and restaurants of Chios.
Give character to your dishes, wrap it in foil, try it as a snack or even better, prefer it grilled, with sweet and sour marmalade, pomegranate syrup, balsamic cream or chantey.
Because of its consistency, Mastelo® soft cheese, when grilled, brings out its characteristic milky taste. But the most impressive thing is that it does not melt, acquiring a chewy texture without losing its shape. It can be quickly and easily grilled on a grill or non-stick pan.

Goat Mastelo® is light with little fat, which is why it is the favorite cheese of those on a "diet"!
It is made from pasteurized, whole goat's milk from the small mammals that live in the Chian mountains. The natural flora of Chios gives flavour characteristics to the milk that are passed on to the final product and characterize it.
The fruit is harvested at full ripeness by partner producers who meet our company's demanding standards. The fruit is transported to the Ponthier factory where it is stored in optimum conditions in order to keep it fresh. There is a controlled storage capacity of 5,700 pallets, equivalent to the annual production.
During production the fruit is sorted, mashed, sugar is added and the puree is refined, then pasteurised to ensure food safety and re-frozen to preserve the taste and colour of the fresh fruit.
OUR SPECIFICATIONS
The fruit: selection of the best varieties and origins, free of impurities, purchased once a year, at the time of harvest, at agreed brix levels, on a contract basis, and thoroughly checked for pesticide residues in each batch.
The process: no additives (colourings, coagulants, flavour additives...), pasteurisation temperature control for each fruit.
The final product: taste test on each batch to ensure a taste and colour identical to fresh fruit, as well as a dense, soft and homogeneous texture.
Quality: commitment of management and all teams to meet the requirements of the strictest IFS (highest level) and BRC (Grade A) standards to ensure food safety. KOSHER/HALAL certifications.
