Aridaia smoked paprika comes from the parallel process of drying and natural smoking of Bahovitika peppers, a variety that has been cultivated for years in the wider region of Almopia (Karatzova). This is achieved by selecting the best plants, usually the most productive ones, from which the seed for the following year is selected (7 kg of fresh peppers are needed for every 1 kg of spice powder!)
