PAN Apple Vinegar is created with double fermentation of Greek apples from select varieties. Ethyl alcohol is created during the first stage of alcoholic fermentation, followed by the second stage of acetic fermentation, same as in the production of wine vinegar. Its bright golden color and distinct aromas are of course reminiscent of ripe apples, while its taste combines elegance with richness and a long finish.
Its mild character makes it an ideal choice for fish marinades, dressings for fruit-enriched salads, and white sauces served with fish or poultry.
Blending knowledge with experience and meticulous care in choosing our grapes, we produce our real red vinegar, boasting a deep rosy color and incomparable clarity. The nose is intense but pleasant, as expected of quality vinegar. Its taste is intense yet elegant, rich yet not at all aggressive.
As a cooking staple, vinegar is as versatile as can be. Either as the lead or a supporting character, it's extensively used in pickles, red sauces and marinades. In Greece, beets or lentils are never served without at least a few drops of quality vinegar – or more to taste.
Distilled at the privately owned 'Kurayoshi' distillery, it is aged in rare Mizunara barrels. Mizunara, or Japanese oak, combines a subtle sweetness, the aroma of aging that tickles the nose with a full and refreshing aftertaste that completes its uniquely exotic profile. A true masterpiece of Japanese art.
Chairman's Reserve Forgotten Casks is one of the most balanced and versatile rums in its class. A premium rum with an extremely interesting history. On May 2, 2007 a major fire broke out at the St. Lucia Distillers distillery in the Roseau Valley, which destroyed part of the premises. Most of the distillery was not damaged, but serious problems arose due to a lack of space for storing casks and ageing the spirits. During the ensuing upheaval Cyril Mangal (Cellar Master) began placing barrels in the most unlikely places in the distillery. Some of these barrels were forgotten, and were rediscovered a few years ago to give us the award-winning rum in the Chairman's range, Forgotten Casks. This is essentially the same blend as the company's trademark rum, Chairman's reserve, aged an additional 4 to 5 years. It comes from the distillation of fermented molasses in a traditional two-column (coffey) still, during which we obtain alcohol from the first and middle levels of the plates (alcohol levels of at least 94%). For this single blended rum we also use the beautiful John Dore no.1 (copper pot still).
